Gourmet Healthy Sandwich

 

      Years ago, when Ross and I were newly married, he had one request for meals: "Please, give me color on the plate!" I had this sandwich at a health-food restaurant on the East Coast back in the late 70's. Ross has been asking for it ever since. It gives color and provides nutrition, too!avocado and tomato

 

1. Set the oven to 350 degrees.

2. Peel and slice one large or two small avocados.

3. Thinly slice 2 small tomatoes.

4. Slice 4 ounces cheddar cheese (or whatever variety you like best).

5. Assemble: Place four slices whole-wheat bread on a baking sheet. Cover each piece with avocado slices, alfalfa sprouts, tomato slices and cheddar cheese--in that order.

6. Bake for 12-15 minutes, until cheese is bubbly and just beginning to brown. Serve immediately. Makes four open-face sandwiches.

Note: Best eaten with fork and knife.
